Corn Beef Fritters  


Corned beef, finely chopped

½ cup self-raising flour

½ cup plain flour

1 egg

1 cup milk

¼ teaspoon salt (optional)



Mix dry ingredients together.

Add egg and gradually add milk until batter is smooth.

Stand mixture in the fridge for ½ hour.

Add corned beef mix well.

Spoon tablespoonfuls of mixture into a fry pan sprayed with extra virgin olive oil and fry until golden on each side.

Serve with a tossed salad and enjoy.
